Zucchini Slice

I made some yummy snacks for my husband’s lunches today. This one was so simple!

400g zucchini, grated

1 medium carrot, grated

1 cup grated cheese

1 cup wholemeal flour + 1tsp baking powder

1/2 cup oil

5 eggs, beaten

salt & pepper

Combine all ingredients and stir. Smooth into a baking tray and cook for 40 minutes at 180 degrees C. Slice and serve. Can be frozen for lunchboxes.

  1. This is a very similar recipe to the one I make. It’s great to make with zucchini and carrot from the garden and eggs from our chooks :-). Can’t get more cheap or healthy than that!!

  3. Great recipe Bel, I have made this a few times now and everyone loves it. But I call it “egg pie” so the kids don’t get hung up on the zucchini part. Yummy!
