Sloppy Lentils 20 August, 2008
This dish is yummier than it sounds! I based ours on this recipe. I am waiting on my order of bulk lentils so had to use tinned lentils from my emergency supply. I also only had half an hour to prepare this, so the tinned lentils made it possible! This amount served the eight of us with some left over for tomorrow’s lunch (with rice, for something different!)
3 tins brown lentils
1 onion, finely diced
3 tblspn olive oil
2 cloves giant russian garlic
1 tin diced tomatoes
3/4 cup tomato puree
1/2 cup tomato paste
2 heaped teaspoons mustard
2 tablespoons salsa (just because it was in the fridge)
3 tablespoons rapadura (can use brown/raw sugar)
good dash of tamari (soy sauce)
2 tablespoons BBQ sauce
herb salt and ground black pepper to taste
bread rolls, split
salad (grated cheese, shredded lettuce, sliced tomatoes, sprouts)
Saute onion and garlic in olive oil. Add tomato paste, puree and diced tomatoes (reduce heat). Add all other ingredients including lentils.
Simmer until thick and flavours have melded - only about 15 minutes.
Serve lentils and grated cheese over lightly toasted bread rolls with basic side salad. Filling, simple and delicious!



Hi Bel, this is a killer last minute recipe. Made this today for dinner tonight while the sick little people slept. The whole house has a beautiful aroma and Ive been picking at it all afternoon. Thanks heaps, its been ages since I found a easy veg recipe like this one
