Sloppy Lentils 20 August, 2008

This dish is yummier than it sounds! I based ours on this recipe. I am waiting on my order of bulk lentils so had to use tinned lentils from my emergency supply. I also only had half an hour to prepare this, so the tinned lentils made it possible! This amount served the eight of us with some left over for tomorrow’s lunch (with rice, for something different!)

Love to Harvest 19 August, 2008

There’s nothing more exciting about gardening for me than the harvests.  I just ducked outside to collect a couple of ingredients for tonight’s vegetable stirfry from the greenhouse garden and came back with:

bok choy, silverbeet, kohl rabi (and young leaves), celery (and leaves), baby carrots, broccoli side-shoots, beans, a snow pea, ceylon spinach leaves, garlic chives, ginger, lemongrass and onion tops!

small quantity of cooked rice
small quantity of stir-fried vegetables
Chilli Sauce (as a dipping sauce)

Menu Week Starting 18th August 17 August, 2008

Our menu last week went fairly smoothly. There were up to 11 here for tea each night. On Saturday night we had an al fresco meal by a bonfire with friends under the near-full moon. On Sunday night we enjoyed a mixture of quick foods and leftovers.

Last week’s menu went fine except we ended up getting some WWOOFers come to stay so I changed both the weekend meals. Saturday we had skin-on potatoes and vegetables with a cheese sauce and on Sunday we had lots of pizzas!

Menu Week Starting 28th July 27 July, 2008

Well, 5 out of 7 meals went to plan last week. We went out to our friends’ one night for BBQ fish (we took baby potatoes, coleslaw, wine, beer and a cake), and another I just couldn’t be bothered and didn’t feel like anything we had in the house… so we had take-away hot chips. We’d had a decent lunch, so chips were fine! So I’ve moved those two meals ahead to this week.

Last week’s menu was yum, but the defrosted risotto just wasn’t the same. Next time we have leftover risotto I’ll leave it for lunches instead of freezing it. The pasta bake with pumpkin, spinach and feta was delicious!

Menu Week Starting 14th July

Last week’s menu was fine except for Thursday. I forgot to defrost the risotto, we were home very late and so we just ordered hot chips from the local take-away. Other than that, everything was yummy! Extra baking I did for the week was two carrot cakes - one to eat tonight and one as a gift. Oh, we also skipped the lemon pudding and just had fruit and yoghurt for dessert that night. I also didn’t make any cookies - so we snacked on fruit last week!
