Menu Week Starting 9th June 6 June, 2008
Last week’s menu was a good, simple week. The Creamy Mushroom Sauce was so yummy we’re having it again (to use up the last of the co-op mushrooms). Friday’s risotto was delish with mashed pumpkin and some green peas, and a little cheese. Mmmmm. I froze 3 containers of it, so will have to find out how to best defrost risotto and we can enjoy it again.
We made the savoury biscuits, which were popular, and also another two carrot cakes was delicious for a shared afternoon tea. I also made a couple of fruity loaves based on the five-cup-cake recipe. Skipped the quiches for lunches because the girls didn’t lay much (and baking and meals used up some eggs!)
We don’t have the same co-op available right now, so I’m not sure where I’m going with my organic product purchasing. When did grocery shopping become so complicated? This week I have pantry & dairy items and fresh greens coming from Organic Buyers Network, as well as a bit of a trip to the local supermarket for oil etc.
From roadside stalls we have fresh potatoes and plenty of onions.
We still have access to a lot of citrus from friends.
In the garden we still have plenty of salad and cooking greens, radishes, lots of big sweet potatoes, a few cucumbers, pumpkins, eggplant, herbs, eggs and macadamias.
Monday: garlic rice & mushroom sauce, steamed homegrown sweet potato, peas, sprinkle grated cheese
Tuesday: lentil loaf, steamed carrots, brussel sprouts, gravy
Wednesday: falafel, salad, hommus wraps with mountain bread (+ boysenberry yoghurt for dessert)
Thursday: spaghetti & pasta sauce from freezer (tomato/vegie type)
Friday: gozleme with spinach & ricotta cottage cheese (sub), salad, boiled eggs
Saturday: potato bake, steamed vegies (+ lemon pudding dessert) (visitors)
Sunday: pumpkin soup & foccacia (+ chocolate slice dessert)
Baking etc: cookies, lemon pudding, chocolate slice (x2 - some for freezer), five cup cakes (x 2 goji berry, date & coconut flavour, for freezer), zucchini slice (lunches - in freezer), macadamia & date bars (lunches).
