Menu Week Starting 6th October 6 October, 2008
Last week, the menu was a little mixed up. The lentil balls became lentil patties as I was in a rush. The potato bake became skin-on potatoes (freshly harvested - wow) and vegetables with creamy mushroom sauce. The pasta bake became straight pasta. The vegetable casserole was swapped for take-away and pushed forward to this week. Overall, nothing was wasted and we ate well.
We did no baking this week at all…
From the co-op we have broccoli, cauliflower, apples, tomatoes and carrots.
I just got a bulk order of tins and jars etc so the store-cupboard is brimming with food again. Just how I like it!
From the garden we still have beans, broad beans, a little broccoli, lettuce, cherry tomatoes, kohl rabi, sugarloaf cabbages, herbs, sweet potatoes (bucketloads), chokos, silverbeet, celery and herbs. We have also discovered some native raspberries fruiting on the edge of the forest. YUM.
None of the last batch of eggs hatched, so still only 20 baby chicks! And we still have ample eggs.
The challenge went really well, and I hope I can keep up the variety with our menu and continue to try new recipes regularly.
This week is a little messy - we’re going camping, and also have some Dutch WWOOFers coming to stay. So meal planning is a challenge, but still a necessity.
Monday: Vegetable casserole with cheese & herb dumplings
Tuesday: Stirfry & rice (using up the vegies!)
Wednesday: Potato & vegies (using up more vegies!)
Thursday: Gnocchi (the packet kind - ick) - CAMPING
Friday: Soup (from freezer) and bread - CAMPING
Saturday: Sausage Sandwiches (store-bought vegetarian sausages) - CAMPING
Sunday: Skin-on potatoes, coleslaw, boiled eggs, green salad with cannelini beans
Baking & Prep: Honey Oat Cookies (fourth try!), zucchini slice, carob balls
