Menu Week Starting 5th May 5 May, 2008
We missed out on our roast vegie night again last week, because we went out to friends’ for tea. We took some roast vegies, salads and desserts though.
My April grocery budget challenge was a bit above what I aimed for, but much better than previous months. I have set myself another challenge for May, but with camping, visitors, two birthdays and Mother’s Day, I’m not sure… So far I’m over budget, but we’ll see what the coming weeks brings.
Monday: pasta, tomato-based sauce, ice-cream cake (so full from afternoon party of pizza and nibbles and cake we just ate the ice-cream cake instead!)
Tuesday: Black Bean Burgers
(substituted pasta from Monday night, birthday girl’s wishes)
Wednesday: Mashed potato & salads
Thursday: CAMPING - bean enchiladas, corn chips
Friday: CAMPING - vegie sausages in bread
Saturday: CAMPING - soup from home freezer
Sunday: CAMPING - Mother’s Day - home late - take-away fish, salad
Baking etc: Pizza bases (birthday party Monday afternoon), birthday cake (Monday afternoon), pre-cook black beans (Tuesday), cookies & carob balls for camp (Wednesday)

We’re planning on going camping next week, so I wanted to stop by and see what kind of camping meals you had planned. Thanks for the ideas! Leftover soup is a great idea that I wouldn’t have thought of. I have some in the freezer right now!
