Menu Week Starting 2nd June 1 June, 2008

Last week’s menu was great. The vegetable & chickpea stew was yummy and we froze some for another night (or lunch) too. Friday’s beans and rice wasn’t so great, but that was more my fault than the recipe I used for inspiration. I’ll try again another time, I think. We didn’t make the savoury biscuits, so will get to those this week. The carrot cake was delicious and I’ll use that recipe again!

What’s in the box?

Just got our organic co-op box on Friday and have 1kg mushrooms, 4 heads broccoli, heaps of carrots, some zucchinis, tomatoes and apples.

From roadside stalls (1.5 weeks ago) we have ripe avocados, potatoes and onions.

From friends we have mandarins galore!

In the garden we still have plenty of salad and cooking greens, pumpkins, herbs, eggs and macadamias.

Monday: pasta & mushroom sauce, steamed broccoli, sprinkle grated cheese

Tuesday: tuna patties & salad

Wednesday: mashed potato, steamed vegies, gravy (+ birthday cake)

Thursday: mexe-bake in slow cooker, boiled eggs, salad

Friday: mushroom risotto & mashed pumpkin & green peas
Saturday: vegie soup, grilled cheese on toast, dessert

Sunday: curry (from freezer), rice, yoghurt

Baking etc: birthday cake (mud cake), birthday cake (? to share at homeschool group), savoury biscuits, easy-quiches for lunches, bread (Saturday)

Lunches: leftovers wrapped in mountain bread with salad, eggs & salad, beans & cheese toasted in mountain bread, leftovers as they are, quiche.

This week I’m doing a Challenge, that’s why there’s no new recipes and it’s a pretty plain menu!
