Menu Week Starting 25th August 24 August, 2008

Everything went well last week except that I swapped Friday night’s roast veg meal for sweet & sour vegies, fish and rice. I moved the roast veg onto Sunday and shifted the Enchiladas to this week coming. Easy!

From the garden we have lettuce, beans, spinach, broccoli, herbs, lots and lots of eggs and more macadamias. The kohl rabi was yummy in a stir-fry, in fact I was able to harvest a lot of produce for the stirfry last week. The next day, I made the leftovers into some yummy spring rolls - my favourite lunch! We ate our last pumpkin from last harvest tonight, so I’m watching the vines we already have and I planted a third variety across the paddock this morning.

I got given a bunch of ladyfinger bananas through the week and we’re enjoying those! I also have a new delivery of apples through the co-op, plenty of cauliflower and broccoli and an abundance of mushrooms because I ordered them through co-op right before the mushroom kit burst into life! I have more avocados too, and a heap of tomatoes. Last week the tinned goods all turned up, so hoping the dry goods bulk order comes this week.

I made five coconut loaves during the week - one as a gift, two we ate and two in the freezer. And a banana and date loaf as well, using the five cup cake principle.

We’ve been eating all the freezer meals with these busy evenings, so I’ll have to start cooking in bulk again soon to refill the supplies!

Monday: spiral pasta with creamy mushroom sauce, steamed cauli & broccoli, tomato slices and herbs

Tuesday: mashed potato, boiled eggs, salad (tomato, lettuce, grated carrot, avocado & any goodies the garden’s offering)

Wednesday: mushroom risotto, steamed greens and carrots

Thursday: enchiladas (Mountain Bread, chili beans, salad) and corn chips

Friday: vegie soup, bread and dessert

Saturday: BBQ fish and salads?

Sunday: chickpea stew (from freezer), curry (from freezer) and rice, dessert

Baking & Prep: make carrot cakes planned for last week and banana cakes with the excess bananas, freeze some of both. Maybe some honey oat cookies as well…
