Menu Week Starting 16th June 15 June, 2008
Last week’s menu went well. Gozlemes was the only new recipe, apart from the Lemon Pudding we had Saturday night. Overall, a nice variety through the week and all went to plan except for a couple of ingredients which didn’t turn up in the organics order and so had to be substituted.
This week we have a visitor through WWOOF, so there’s an extra adult to feed. That shouldn’t make too much difference since we’re cooking for eight plus leftovers every night anyway.
From roadside stalls we still have fresh potatoes and plenty of onions, will ask hubby to buy some avocados this week.
We still have access to a lot of citrus from friends.
In the garden we still have plenty of salad and cooking greens, some peas and beans, radishes, lots of big sweet potatoes, pumpkins, eggplant, herbs, eggs and macadamias.
Monday: pasta bake with spirals and sauce from the freezer - easy night!
Tuesday: roast vegetables, cauliflower, peas, cheese sauce gravy
Wednesday: roast pumpkin soup, homemade bread, dessert (mango slice)
Thursday: mountain bread quiches & salad (home late), dessert (yoghurt)
Friday: mashed potato, boiled eggs, salads
Saturday: BBQ - fish, salads, dessert (bread & butter pudding)
Sunday: black bean burger wraps
Baking & Prep: cookies, sultana cake, banana cake, mango slice (Tue, for Wed), bread (Wed), roast pumpkin (for soup Wed), make flavoured yoghurt, bread & butter pudding (Sat), precook black beans (Sun).

I noticed you’ve used a lot of mountain bread recipes. We’ve made the lasagne and enjoyed it. I omitted the beef stock and added red wine though! I know you don’t eat meat but maybe a lentil “mince” would work well instead? It’s really nice and quite easy.
Let me know how the bread and butter pudding goes!
We have also made the tandoori chicken wraps from the cookbook but they are harder to adapt to being meat-free.

Thanks Liz! We’ve made a lasagne using mountain bread, and also a mexican bake - both in the slow cooker. Delish!
