Menu Week Starting 15th September 15 September, 2008

Last week’s menu went well, except we opted for take-away fish instead of the enchilada dish on Sunday as we were totally exhausted and home late. We moved that to tonight.

We missed our birthday outing and I didn’t get to make the Honey Oat Cookies. Immi made some Vanilla Biscuits to take to theatre though. Ab had a birthday cake after tea on her birthday, which Immi baked for her.

The chickpea patties last week weren’t as nice as other patties I’ve made, so I won’t use that recipe again, or post it here.

From local organic co-op we have onions, broccoli, carrots, apples and tomatoes. From friends we have bananas, limes and lemons. There’s still lots of potatoes from the roadside stall and a few vegies left from our Organics order.

From the garden we have beans, peas, broad beans, a little broccoli, lettuce, cherry tomatoes, kohl rabi, sugarloaf cabbages, bok choy, herbs, silverbeet, spinach, chokos, baby carrots, celery and herbs. And last week I harvested two huge sweet potatoes which we ate that night.

I borrowed a friends’ dehydrator and dried a box of bananas on the weekend. My kids love dried banana! They’ve also been making banana smoothies and eating them like monkeys of course. Gotta love a glut.

Ah, gluts - we still have dozens of eggs coming in, even with all the broody hens and new hatchings, so we’re trying to eat eggs a couple of times a week at least.

It’s the third week of the challenge so I’ll be trying more new recipes this week.

Monday: Sweet Corn & Bean Enchiladas (based on this recipe) steamed pumpkin & broccoli on the side

Tuesday: Spiral pasta with Creamy Broccoli Sauce and diced fresh tomato & herbs on the side and a sprinkle of cheddar or parmesan cheese

Wednesday: Vegetable soup & bread (most of us out or coming and going, so this is a flexible meal and will use up the odds and ends of vegetables of course!)

Thursday: Egg “burgers” - fried egg and salad on toasted bread (Four kids have a pizza party till 5.30pm, so only some of us will be hungry)

Friday: Mashed potato, eggs and salads (coleslaw with homegrown cabbage)

Saturday: Sweet Potato Rice Patties (based on this recipe) with salad or steamed vegies

Sunday: BBQ fish & salads (visitors)

Baking & Prep: Some honey oat cookies and perhaps some cheese biscuits for the Dad.

    Those recipes sound so nice. Can’t wait to hear how they turn out. Next week I’ll have to be sure to try some new recipes. Although you’re tempting me to swap some of the ones planned for this week…
