Menu Week Starting 14th July 14 July, 2008
Last week’s menu was fine except for Thursday. I forgot to defrost the risotto, we were home very late and so we just ordered hot chips from the local take-away. Other than that, everything was yummy! Extra baking I did for the week was two carrot cakes - one to eat tonight and one as a gift. Oh, we also skipped the lemon pudding and just had fruit and yoghurt for dessert that night. I also didn’t make any cookies - so we snacked on fruit last week!
In the garden we still have salad and cooking greens (including broccoli!, some peas and beans), sweet potatoes, pumpkins, herbs, a few eggs and macadamias. The chickens are laying just a couple of eggs per day, which is a LOT less than we’re used to receiving.
From the Organics Co-op we have several kilos of carrots and plenty of apples. From roadside stalls we have a fresh sack of potatoes, and some lovely avocados. We also have local bananas, pineapples and citrus. Life is good!
I’ve placed orders to re-stock the pantry with basics, so they should both arrive this week. I love having a well-stocked pantry.
Monday: black bean burger wraps, carrot cake for dessert
Tuesday: roast vegies, steamed vegies, gravy
Wednesday: mushroom risotto (from freezer), mashed pumpkin, peas & beans
Thursday: corn chowder, bread, lemon pudding for dessert
Friday: pumpkin & spinach pasta bake, side salad
Saturday: vegie & chickpea stew, steamed green vegies
Sunday: crockpot mexe-bake using Mountain Bread, side salad
Baking & Prep: cookies, bread (Thursday), lemon pudding (Thursday), more carrot cakes for freezer.
