Coconut Loaf

Here’s another recipe from the Simple Savings site. It’s a quick and easy one which I usually cook in bulk (x5) and freeze.

1 cup dessicated coconut

1 cup wholemeal spelt flour + 1/2 tsp baking powder (or 1 cup SR flour)

1/2 cup raw sugar (or 1/3 cup rapadura)
3/4 cup milk

Mix all together with a wooden spoon and put in a greased and floured loaf tin. Bake at 180 degrees for around 40 minutes or until top springs back when pushed in with your finger. Can be iced with lemon icing: grate lemon rind, mix with butter until softened, add icing sugar and combine, add lemon juice to reach spreadable consistency. Yum!
