Chocolate Chews 23 May, 2008
This was shared on the Simple Savings Forums. It originally came from a NMAA cookbook. Here’s our version:
1 cup crushed organic weet-bix
1 cup wholemeal flour with 1/4 tsp salt and 1/2 tsp baking powder
1 cup desiccated coconut
1 teaspoon vanilla
1/2 cup sugar
1 tablespoon cocoa
155g (50z) butter
Chocolate icing
1 cup icing sugar
1 tablespoon cocoa
1 1/2 tablespoons hot water
Melt butter, then stir all ingredients into it. Press on to a 7″ x 11″ tray. Cook 15 mins in moderate oven. Ice while hot with chocolate icing. Cut into 2″ squares and leave until cold.
And we doubled it. And it worked fine.
