Banana Goji Muffins 27 August, 2007

¾ cup wholemeal spelt flour
½ cup rolled oats
½ cup rapidura sugar
1 teaspoon baking powder
½ teaspoon bicarb soda
¼ teaspoon salt
¼ teaspoon cinnamon
¼ cup desiccated coconut
50ml macadamia oil
100ml milk
½ teaspoon vanilla extract
½ cup goji berries soaked in hot water
1 large banana, mashed

Drain goji berries. Mix dry ingredients in a bowl. Add milk, oil, vanilla, berries and banana. Mix well with a wooden spoon. Pour batter into muffin trays and bake for 20 minutes at 200 degrees C.
Okay to freeze. Recipe doubles well.


First Australian Homeschooling Book

The first known book published in Australia on the subject of homeschooling was: A Mother’s Offering to her Children by Mrs Charlotte Barton in 1841. It contained 13 chapters of true instructive and moral stories. It found widespread use among homeschooling mothers of the time. Homeschooling in Australia has a long history! (more…)

Also from the Australian Conservation Foundation is an eco-calculator.  I was impressed to find that my lifestyle impacts upon the environment at about half the rate of the average Aussie… But my footprint is till about twice the size of that which is required for a sustainable Australia…  Still a way to go!
And check out the Earthkids pages.  My kids are really interested in global warming right now, and there’s a link on the Earthkids page called Save Happy Feet - highlighting the plight of the penguin in regard to global warming.

Wildlife! 8 August, 2007

During the last 1.5 weeks we’ve been blessed to see some unusual wildlife close to our home. Yesterday we saw a tree kangaroo. We’ve never seen one before, not even in captivity, so it was such a treat to have one amongst the trees just metres from our front door.

Last week we were driving along our road and close to our front gate we saw an echidna digging a hole in the cutting on the side of the road. Perhaps it was digging for food?

When we took our wwoofers down to see the creek at our back boundary, two of the resident platypuses were sitting on a rock in the middle of the water.
